On Monday, April 18th, I launched my first cookbook, ‘My Gluten-free Kitchen’ at the gorgeous Residence Club in Dublin.

There was great attendance of the ‘who’s-who’ in the culinary world, with over 100 people squeezed into the Behan Lodge and Terrace Gardens where guests enjoyed wines sponsored by Wines Direct and JN Nicholson’s.

With thanks to food sponsors Bunzl McLaughlin’s, Graham Neville and his team created an array of canapés from Macaroons to Tempura of Prawns, with a little help from ‘My Gluten Free Kitchen’ this was the only event many Coeliac diners didn’t have to check whether nibbles were gluten-free!

I really enjoyed the buzzy atmosphere of the packed room of foodies, chefs, press, friends and family – mingling, standing in for the odd photo and of course at the ‘clink’ of a glass, I delivered my speech officially and launched the cookbook. What a proud moment.

RTÉ’s Ella McSweeney also spoke at the opening and recounted the time at The Olde Post Inn after a dreary day of filming for ‘Ear to the Ground’ when we treated them to a memorable light-lunch.

I would sincerely like to thank everyone who came out to celebrate with myself and Tara. We’ve been overwhelmed by the reaction and support that the book has received so far. This book was a closely held dream over the past couple years having been diagnosed as Coeliac and realising that I actually didn’t have to miss the meals I love.

This is the ethos of the book, accessible and delicious dishes that take down that barrier of ‘where do I start’ when you get that diagnosis. I hope it gives those with the condition and those who are following the gluten free lifestyle a new found love of cooking. I wanted this to be a cookbook for everybody and this is what the end result has been.

Celebrations went late into the evening and now we are gearing up for the Cavan launch. Please do join me at the local book launch in Cavan at Crannog Bookshop at 7pm on Friday 22nd
