Food Champion

I am delighted to have been named amongst 16 new emerging Fáilte Ireland Food Champions who will represent Ireland’s Ancient East to promote the importance of Ireland’s food offering to tourists and visitors to Ireland.

Cavan Food ChampionTo be chosen from over 400 nominees as part of the Food Tourism Network Development programme is a great honour. The tourism and hospitality industry in Ireland employs 205,000 people and generates a staggering €6 billion in overseas revenue each year.  I look forward to actively influencing the future of Irish cuisine and food tourism in Cavan – the best spot in Ireland for quality produce.

As my regular visitors will already know I am hugely passionate about Irish food. As a long-time advocate to using fresh seasonal ingredients and local food producers, at the The Olde Post Inn we source the majority of our ingredients from within a 10 mile radius of our award-winning fine-dining restaurant in Cloverhill, Co. Cavan. I believe food has an unmatched ability to communicate a unique sense of place. Local cuisine provides a direct connection to the history of a region, the soul of its people and the rhythm of daily life.

Gluten free goats cheese bruschettaOne of our local suppliers is Corleggy Cheese, an Irish farmhouse who make a selection of cheese in County Cavan. The Corleggy herd of goats graze on the lush drumlins – little hills – a familiar sight in County Cavan. Their commitment to creating artisan cheeses made with love, care and devotion is evident with every bite and we love using their cheese in our dishes at The Olde Post Inn. To be named as one of Fáilte Ireland’s Food Champions allows me to represent the excellent artisan producers and food offering we have here in Cavan like Corleggy Cheese. I am looking forward to taking a more active role in developing Ireland’s food tourism experience and shaping our reputation as an exceptional destination for fine-dining around the globe.

As part of my role I will work with the local community to help build Ireland’s food tourism reputation and assist in the development of new food experiences in Cavan to encourage visitors to stop more, spend more, and stay longer.
