I was devastated when I was diagnosed with Coeliac Disease. As a Chef it felt like my world was crumbling around me. Faced with this challenge I learned everything possible about my condition and how to adapt my favourite dishes to a gluten-free diet. My passion is for creating exceptional dishes with the best of fresh ingredients, sourced as locally as possible. Now through my blog, ‘My Gluten-free Kitchen’ I hope to share my journey, as a chef and father, re-discovering the meals that I love made suitable for gluten-free diets and with no compromise on flavour.

Our Cookery Cottage officially opened its doors on Saturday September 10th with our Mad about Italy cookery course. On hand to wish us well was Richard Bruton – Minister for Education. We are looking forward to hosting four other classes in the coming weeks and we will finish off with getting all set for Christmas dinner
